On Friday and Saturday nights, our in-house mixologist serves up some of the finest cocktails this side of San Francisco, which is where he learned his art. This reclusive fellow (let's call him Mr N) takes his libations seriously. He will not attempt to impress you with shaker-juggling theatrics. He will not float tiny umbrellas or other nicknacks in your glass. He will not make your drink sugary enough to make your teeth fall out. To Mr N, bartending is serious business; it's all about finding perfect balance: not too sweet, not too sour, not too bitter. His eyedropper approach to cocktail perfection may seem a bit obsessive. But as Mr N says, if he wouldn't drink it himself, he wouldn't serve it to you.
